I never realized just how mouthwatering and buttery “melt in your mouth” this recipe was! Throughout my years of creating new recipes, I’ve been asked by many people whether I had a spice mix for this recipe. I always brushed it off with “Well.., I’m focused on creating healthy dishes, so I haven’t really cooked it at home”, all the while thinking (on the inside).. heavens forbid.. the name Butter Chicken just makes my arteries clog! Then the dreaded pandemic hit!!! What’s a person to do during a pandemic while sitting at home? For me, it was about trying new dishes! So I followed my heart.. which apparently is in my tummy as it has me heading to my fridge a LOT. On a whim, while eyeing recipes for chicken late on a Saturday night, yes, that is what I really do to relax & eat with my eyes, followed by a quick trip to the fridge and a late night snack. Mmmm.. love those late night 1 am snacks. Yes, don’t deny it, you do it too, well.. the late night snacks at least, maybe not necessarily “googling” eye catching yummy food photos. So.. anyways, back to my butter chicken. My late night musings led me to creating this heavenly mouthwatering Butter Chicken dish! Usually, it takes me about 3-4 months to create this recipe, apparently my inner intuition a.k.a my tummy must have been really hungry too as this creation only took me about a month or so… well, that and the pandemic. I have to say it, it was an instant hit at home.
