Fusion Indian blackened chicken w/vegetable coconut curry

This recipe was sent in by our friend Jacquie Ohh. I met her through Instagram and loved her motivational posts, her passion to give back to society and mantra of uplifting women. Most of all I love her wonderful skincare products. I use her all natural, organic moisturizer everyday and I ABSOLUTELY LOVE it . She recently bought some of my spice blends and true to her adventurous spirit, gave it her own delicious creative twist.

Ingredients needed
💥 Veggies: #broccoli, #cauliflower, carrots, #mushrooms, onions and plenty of red pepper flakes and some of Grandma's Spicy Curry seasonings adjusted to your liking!!! 
💥 Coconut milk
💥 Anar Gourmet Foods Grandma's Spicy Chicken Curry seasoning kit
💥 Chicken blackened with some of the Grandma's Chicken Curry #seasonings from the seasoning kit.
💥 Pair with coconut rice, and a simple green salad!!!!
Recipe:
1. Sprinkle on some of Grandma's Spicy Chicken curry seasonings onto chicken breasts. Marinate for at least 2 hours. 
2. Blacken marinated chicken over medium high heat. Turn heat down to medium low and pour ~ 1/2 cup of chicken broth into pan. Cover pan and simmer for ~ 25-30 mins till chicken falls apart. If chicken is sticking to pan, add a little more broth. 
3. Sauté veggies in olive oil and spices over medium heat for ~10-15 mins till desired tenderness. Add coconut milk in the last 5 mins.
