This Vegan Potato Curry just hits the spot đŻ when you are craving đ good authentic homemade đĄ South Indian flavors from Andhra Pradesh! The first time I realized how special this dish was when I was just 4 or 5 years old in India. My father was the Principal of a Christian boarding school in Uttar Pradesh. As I recall, my dad was out of town, probably on a work related trip. My mom decided that we would just eat leftovers for dinner. We had a young 21 year old student missionary from the U.S. - Mickey, staying with us. I think he was the first blond haired, blue eyed person I had seen, not to mention his height of 6 feet. In a family where the âtallâ adults topped of at 5â2â, it was quite interesting.  He talked about his beautiful girlfriend back in the U..S.. I think her name was Deanne. This concept of having a boyfriend or girlfriend being together without being married was also something I couldnât wrap my head around at that time in India. It was just inconceivable. I remember staring at him with wide teacup eyes as I found all this SO very fascinating.
This potato curry that my mom made was Mickeyâs favorite dish. He absolutely loved it. That evening, Mickey asked my mom if we were having potato curry and chapatis for dinner. She said something about leftovers . Apparently he wasnât crazy about what we had for leftovers so he asked my mom if he could help her cook it . I remember thinking, âItâs just potato curry, we have it all the time. Whatâs the big deal ??â I think my poor tired mom obliged and cooked the dish for Mickey. đ She thought it was quite funny to crave such simple food đ. Well, NOW I DO know what the BIG DEAL about this dish is !Â

On those days you want something warm, comforting and vegan/ vegetarian. Nothing beats the flavors of this simple South Indian homemade potato curry made with my Grandmaâs âsecretâ homemade Andhra curry powder and other spices ! Adding egg to it is optional. However, I just love how well it melds all the flavors together and takes the edge off of spicy đ¶ heat.
Pair it with Naan, chapatis or rice . Enjoy eating this very special homemade dish ! đ.
