This Vegan Potato Curry just hits the spot 🎯 when you are craving 😋 good authentic homemade 🏡 South Indian flavors from Andhra Pradesh! It holds some very special memories for me of my very first exposure to the western world.Scroll all the way down to see a video of how to make this yummy curry.
The first time I realized how special this dish was when I was just 4 or 5 years old in India. My father was the Principal of a Christian boarding school in Uttar Pradesh. As I recall, my dad was out of town, probably on a work related trip. My mom decided that we would just eat leftovers for dinner. We had a young 21 year old student missionary from the U.S. - Mickey, staying with us. I think he was the first blond haired, blue eyed person I had seen, not to mention his height of 6 feet. In a family where the “tall” adults topped of at 5’2”, it was quite interesting. He talked about his beautiful girlfriend back in the U..S.. I think her name was Deanne. This concept of having a boyfriend or girlfriend being together without being married was also something I couldn’t wrap my head around at that time in India. It was just inconceivable. I remember staring at him with wide teacup eyes as I found all this SO very fascinating.
This potato curry that my mom made was Mickey’s favorite dish. He absolutely loved it. That evening, Mickey asked my mom if we were having potato curry and chapatis for dinner. She said something about leftovers . Apparently he wasn’t crazy about what we had for leftovers so he asked my mom if he could help her cook it . I remember thinking, “It’s just potato curry, we have it all the time. What’s the big deal ??” I think my poor tired mom obliged and cooked the dish for Mickey. 😃 She thought it was quite funny to crave such simple food 😂. Well, NOW I DO know what the BIG DEAL about this dish is !
On those days you want something warm, comforting and vegan/ vegetarian. Nothing beats the flavors of this simple South Indian homemade potato curry made with my Grandma’s “secret” homemade Andhra curry powder and other spices ! Adding egg to it is optional. However, I just love how well it melds all the flavors together and takes the edge off of spicy 🌶 heat.
Pair it with Naan, chapatis or rice . Enjoy eating this very special homemade dish ! 😋.

I enjoy all the Anar kits. This Spicy Chicken Marinade kit is one of my favorites. It's easy to make and gives my chicken a wonderful flavor. Just the right amount of spice for my taste. If you want something a bit less spicy, jus follow the cooking tips from What that come with the product. Yum!

I have a difficult time getting my kids to eat vegetables, but they LOVE this spice mix. I work full time from home, so I have zero time for dinner. I have been able to basically make takeout (which is around $100 for our large family) 2 times a week with this mix! With grocery store red onions, this is what I did:
3PM: Slow cook red onions on low
4PM: Add large package frozen spinach. Add can of coconut milk. Air fry cubed extra firm tofu. Make basmati rice in the rice cooker.
5PM: Added tofu to spinach.
I don't remember when I added the spice packets (there were two), because I recycled the packets with the instructions. :)
I made it twice this way, and everybody loved it. The small one ate, even though it was spicy. Even though this isn't authentic, I might try it with sweet potatoes and spinach? I'm trying to eat more veggies. I'm online getting more!

Grandma’s Spicy Chicken has always been a family favorite and just tonight expanded the recipes to make with this seasoning kit using it for pork tenderloin. Excellent dish with no modifications just substituting the protein. We love Anar gourmet foods!
