Yogurt Raita Variation: Cool Down Spicy Indian Food With This Simple Trick 🔥

If you've ever taken a bite of a really good curry and felt the heat creep up faster than expected, there's a fix that's been in Indian kitchens forever: raita.

This one comes straight from my cousin, who makes a version that's more savory and flavorful than a simpler recipe that my mom shared with me. I'll share both — the quick version and hers — so you can pick based on how much time (and how many veggies) you have on hand. Hope you enjoy it as much as my family does. 

Why raita works

Yogurt's fat and protein coat your tongue and neutralize capsaicin, the compound that makes chilies spicy, way more effectively than water ever could. Put a dollop of it on your plate and scoop up each bite of curry with it. It brings down the heat significantly and pairs beautifully with Indian food in general.

Simple hack: If you're short on time, a spoonful of plain yogurt on your plate does the trick on its own. Any plain yogurt, including greek yogurt work, however my preferred brand of choice is Stonyfield yogurt. 

The Easy version

Plain yogurt, diced cucumber, and a pinch of salt. That's it. Cool, refreshing, and ready in two minutes.

My cousin's version (more savory and flavorful)

This one adds a few extra ingredients for a more robust, authentic flavor — including diced green chilies if you want it spicier, which sounds counterintuitive for a cooling condiment, but the yogurt still balances it out beautifully.

Ingredients (makes about 1 cup)

  • 1 cup plain yogurt (lowfat or nonfat) 
  • 2 inches cucumber, deseeded and diced
  • 2–3 pinches salt

Optional flavor boost:

  • 2–3 tablespoons purple onion, diced small
  • 2–3 tablespoons tomato, diced small
  • Fresh cilantro, diced small
  • A few sliced green chilies or jalapeño, for a spicier kick

How to make it

  1. Deseed and dice the cucumber into small bits.
  2. Mix the yogurt, cucumber, and salt in a bowl.
  3. For the flavor boost, stir in small bits of diced onion, tomato, cilantro, and sliced chilies.
  4. Chill briefly if you have time, then serve.

Make the simple version, or give it the full flavor boost — either way, put a dollop on your plate and scoop it up with each bite of curry. It's the easiest way to make spicy Indian food more enjoyable without losing any of the flavor.
